Cowboy Recipe.....to die for ~Yumeee
2 Cups Buttermilk
2 Cups flour
1 scant tablespoon Salt
lots of black pepper
1/4- 1/2 tsp cayenne pepper
Canola Oil
Slice onion very thin. Place in a baking dish and cover with buttermilk for at least one hour. Combine dry ingredients and set aside.
Heat oil to 375 degrees
Grab a handful of onions, throw into the flour mixture,
tab to shake off excess and plunge into hot oil. Fry for a few minutes and remove as soon as golden brown.

Repeat until onions are gone.
3 key points to making these: Use a sharp knife, soak the onions in buttermilk for at least 1 hour and it is important that you oil is 375 degrees.

What we do in class.....LOL
We study so hard......we cram 1 semester of work into 4 weeks of school and taking 2 classes this term I am mentally drained! So was our instructors............! We brought out the Wii. Now this is part of the curriculum, we were going over how the Wii is such an educational and technological tool for classrooms. So after our presentation, we had to experience it to prove to us its educational value! LOL In other words, we had fun in class yesterday!

Happy 28th Birthday................
Stephanie was born on Father's Day 28 years ago! Want to wish her a Happy Birthday from her mom! I realized that I didn't have any pictures (without other family members in the pictures, LOL) so I wanted to dedicate this spot to her only for a special day!

YIPEEEE Got a 3.0 on my presentation!!!!!!
As most know, I am going to college for my Masters in Counseling. I had to give a presentation on Physical and Cognitive Development of Adolescence. A rubric is followed by all educational institutions for grading purposes and is a good thing, because you the student can choose how well you do on your assignment or paper by following the rubric. It is hard to get a perfect score, but it does happen. I received one 3 out of 3.....................Feels so good! So far I continue to have a 4.0 gpa!

As I posted...here are my picture from the storm!
I didn't take but two pictures of the trees that fell around my house. They both landed on the fence, and thanks to Dad he had those fixed by 8 a.m. the next morning. I couldn't believe how the wind can just rip off things like the roof. This is a pole barn, usually withstand lots of wind, rain, snow...etc, but not a storm! Ripped of the doors and even the tracks the sliding doors were on! Thank God no one was seriously injured! Not even my girls were hurt (horses)! They were scared after the storm passed, I went right out to check on them~

Kale's ballgame was Saturday at 1:40, the heat of the day, when the sun was beating down so hot, that my baby girl couldn't go to the park and play. The equipment was so hot, and the padded floor on the playground was reflecting heat and I could feel it coming up through my shoes! So we watched the ballgame and had slush puppies to stay cool!
I couldn't resist....may get fired....NOT ~LOL
I couldn't resist, my boss is so much fun to mess with, he is somewhat 'blond'. A few months ago, my daughter drove his daughter to a baseball game, (keep in mind this jeep is 'new' to him and his daughter is 16 and still does not have her drivers license ~ great dad to haul her around everywhere)
He came to pick up his daughter at the ball field, turned in to park by my daughters car and the tires are so big on this jeep, they extend outside the rim of the jeep, so his tire ran down my daughters car leaving a black strip. We have made fun of him telling him he is unable to see and to get a jeep the size of him! So the 'payback' was 'great!' When he parked by us, I first looked for more black strips down the car (LOL). I told my daughter we have to do something to his jeep, she had pink crape paper in her car, so what is a girl to do? We decorated his jeep in PINK! You can't see very well because of the angle I took the picture with my IPhone, but it had crape paper inside and out (he left his sunroof open)
This is great because he still doesn't know who did it! Oh well, just wish I had seen his face when he came out! Oh, his daughter was with him so she probably didn't help him get the paper off.

Storm damage
I will post pictures soon! Yesterday afternoon approximately 1:30 my hubbie called and said, "take cover now", a huge storm is coming your way. So my daughter and I got in the hall with the dog...............the wind hit soon after the call! It sounded like everything was hitting our house, it was a sound like no other. Later to find out, the wind picked up our front porch and sat it back down! After about 10 minutes, I got up and turned on the tv to find out we still were not thru with the storms. I opened the back door and saw my barn doors off and 2 trees just uprooted!
Looking around to see what the weather was doing, and to see where my girls (horses) were when my attention was caught elsewhere! MY BARN.....OMG! It ripped one side of my barn off! There was sheet metal in the pasture along with my doors to the barn. I really got worried about my horses! If they were in the barn when the storm hit, they could be trapped or hurt badly!
I was calling my husband, he was trying to get home, he said trees and powerlines were down everywhere and he had to try another route. I went looking for my horses, and finally after 20 minutes he got home (it is a 4-5 minute drive from his work)!
We found the horses, they were in the back of the barn scared to death, but not hurt! Thank God! We assessed all the damage and could not believe how that storm ripped through so fast and caused so much damage! One sheet of our long tin off our barn roof blew off, the wind whipped it around and went in the ground under a tree root and jammed itself up against the barn. Hubbie and I tried to get the tin out of the way of the horses, and realized that it was under the tree root! Amazing what a storm can do!
We are all ok! I will post pictures from my Iphone when I can get them to send....yesterday the lines were jammed up....probably due to all the family and friends calling to see if we were ok!

Guess what I got last night?
A new Bike! I am so excited! I love riding and for my anniversary my hubbie buys me a bike, chain lock and a (hilarious) helmet. Now I am a believer in wearing head gear, that is not what I am saying......just not use to wearing a air dynamic designed.......LOL I came home and rode about 1.5 miles before the storm hit. I do have to admit when the storm hit, our gas can went out flying across our driveway and one of our tree limbs broke in the back yard. It is lightening like crazy! So when the wind hit, I go running out on the front porch before the winds takes my bike off the front porch! I did save it!

Mickey feels right at home!
Mickey, our adopted cat from Sebastian Humane Society, feels this house is his home. He makes his self right at home, in most places. Our Corgi "Cowboy" and him are so compatible, Mickey waits on him around a chair or corner and then jumps him. I have wanted to have a camera and see what they 'really' do during the day when we are gone. Cause they sleep a lot when we get home! LOL We love him and wondered how we have done without him!
As I worked all day yesterday sitting in the other recliner, desperately trying to complete my presentation on Physical and Cognitive Development in Developmental Counseling class, Mickey was tired of waiting on me to give him attention, so he hit the other recliner and slept.....Hummmm that sounds familiar, he is male also!

Back to the books!
Summer schools starts Thursday and I am not ready! I have had approximately 3 1/2 weeks off from my spring classes, and I really did not think I was going to recover enough to start classes for the summer. Today my room was stored for the summer, just completed my grades and now I am starting summer school.......:(
This is my second masters, my first was in Educational Leadership and after completing it, I realized that all the time I wanted to be a school counselor, so what is a girl to do? Return and get her counseling degree! I love studying the brain and theories, psychoanalysis.......my good friend is always telling me that I am analyzing him and it makes him nervous! LOL I can do this because my other good friend in Iowa, she will test me and I have to really stay on my toes, she will pick my brain!
So I will apologize now for not keeping my blog up to date on a daily basis. I will be going to school in June and July I will help our school counselor with students schedules and getting ready for the school year! This will help me when I start my internship this fall!
I love my job!
